A cool website, Rambling Thoughts, and a Recipe

I feel absolutely terrible. The kids are better, except for an occasional cough here and there.  Now Kevin has it too.  (Not good). Thanks for all your kind comments and helpful tips for next time (heaven help us, please no!) this happens.  We've had so much going on around here but not much worthy of posting.  You all know I've been sick.  Like, sooooo sick.  I'm not even kidding, not even a little.  I've been in bed, asleep, coughing to the point of literally passing out, runny nose, running a fever for most of the past seven plus days.  Except when I've been to the doctor.  That's when the fever disappears every single time.  I think sitting and waiting in their nice cool waiting room before my appointments drops my internal temperature or something.

  I did feel well enough to sit on our front porch and watch the rain come pouring down the other night.  It was actually nice outside that evening.  But then I felt like crud yesterday and today.  So much that I couldn't take it anymore, and went out and tried a new Urgent Care first thing yesterday morning.  I found one that was awesome and is open from 7am to 10pm every day of the week and they treat you very well there.  In fact, they had no one in their waiting room when I got there, but when I was done they had several people there.  The other place never had anyone waiting and was always empty.  I'm starting to see why.  They are mean there.  I cannot say enough about how this Dignity Health facility treated me!  They were awesome!  I was given a new antibiotic called Levofloxacin (or at least, new to me) that will work on all my issues.  I have bronchitis and on top of that I have a bladder/kidney infection now too.  Arg!  But Mom's aren't really allowed to be sick, are we?  I've got so much to do. (Like get back to work!) I wish I could just pass on this whole sickness thing and get on with things, but it won't let me be.  

It's Sunday now and I'm feeling a little bit better than I did yesterday.  I'm hoping I will continue to improve and will be back to work by sometime this week.  I've got several appointments lined up.  My doctor wants me to see a Pulmonologist, but I can't get in to see them until the end of August.   I tried calling them twice to get a better date, they had nothing.  That's not gonna work.  I can't be out that long.  I've also got another appointment with my allergist and my yearly appointment with my cardiologist coming up soon too.  I'm covering all my basis, can u tell?

I did want to share something really cool with you today.  Something I personally just discovered myself to help with meal planning.  No, I don't get compensated to promote this site.  I just think this site is so great I'm just shouting it from the rooftops for free!  Okay.  I've said it before that I do really well planning and cooking meals at home when I have a plan, but I HATE making the plans and the accompanying grocery lists, and checking all the store sales because I'm on a budget.  It takes FOREVER!  

But then I found Food on the Table.  It's a meal planning website based on the stores you shop at.  You can sign up, in less than a minute, choose the exact stores you want to shop, and then they provide you with a bunch of recipes that can be made with the items on sale at your store.  Once you've selected your menu for the week, you can print out a shopping list and you're ready to go.  My family loved the chicken fajitas I made from the recipes on this site.  And it was so simple I could make it even though I didn't feel good!  It's an easy way to save a little money if you don't have time or the desire to use coupons.  I have to admit, I only use coupon if they are really good.  Most of the time I am faithful about using my Savings Catcher App from Walmart, but I'm told that only captures sale prices on the major competitors and not some of the smaller grocery store chains in our area.  Although, I've saved $413.25 so far this year just using that free app.  Anyway, this website won't save you tons of money like CouponSense (not a free site) or other similar sites will, but those sites don't help you with meal planning and grocery lists either.  It would be awesome to use Food on the Table, Savings Catcher, and CouponSense together.....you could save really big that way.  Food on the Table has a limited version you can use for free to plan up to three meals a week or there is an option to upgrade for unlimited use of the site.  When I signed up there was a promo code for free lifetime upgrade that looks like it is no longer working.  (I bet if you Google it you could find another great deal in the coming weeks.)

Anyway.....that's my little plug for my newest favorite thing.  I'm always on the lookout for new, budget-friendly recipes and this site really fits the bill.  

In other news......

* The other day Curtis had Lexi take a few photos of him quick like on our front porch.  They turned out so well I just had to share one of them.  I don't know why he doesn't smile though.  He has such a great smile too.  He looks so serious in this photo.


He looks really good, if I do say so myself, doesn't he?  And Lexi is becoming quite the little photographer too!  I can't get over it.  I also can't get over the fact that my babies ( I can't let them hear me refer to them as babies.  I'll never hear the end of it.) will be off to college in a couple weeks too.  

* Since Lexi is on a roll with taking everyone's picture I've decided to use some of the shots she takes to get some new photos of my kids.  I want to hang them in our family room eventually.  Like I mentioned before, I want a new family photo, but Kevin isn't up for it yet.  So, I'm making due with the last family photo we had taken just before Kyle left on his mission.  Yes, it's been that long.  I've got a whole bin full of picture frames I've been going through to find the right ones for my wall.  They've been sitting in a bin in my family room and now my living room for months.


I know, I could have a huge garage sale just with picture frames and these aren't even all that I have.  I have a few more stashed away in totes and some in a closet.  These are just the ones I've been mulling over recently.  I want to paint a few of them, but I'm not up for that just yet.  At this rate my kids will all be grandparents themselves if I don't get a move on.

So far I've decided on two photos and two frames.  Here's what I have so far.




These aren't my favorite photos but they will do for now.  Like I said, I have plans to get new ones taken as soon as possible.  This way they will include Chance too, since he's a part of our family.  Our family is growing and that's a good thing.

I found a yummy recipe I want to try sometime.  You know, once I'm better and won't get everyone sick.   


Oreo Cheesecake Cookies
Ingredients
4 ounces cream cheese, softened
8 tablespoons salted butter, at room temperature
3/4 cup sugar
1 cup plus 2 tablespoons all purpose flour
10 Oreo cookies, broken into pieces

Directions



  • In the body of a stand mixer fitted with a paddle attachment, beat cream cheese and butter until light and fluffy, scraping down the sides as needed.
  • Add the sugar and beat well.
  • Add in flour, a small bit at a time, beating in on low speed, just until incorporated. Fold in oreos until evenly distributed.
  • Cover bowl with plastic wrap and place in the refrigerator for at least 45 minutes, and up to 2 hours.
  • 30 minutes prior to baking, preheat oven to 350 degrees .
  • Line a large baking sheet with parchment paper.
  • Using a cookie scoop, scoop out 2 tablespoon sized balls of dough, roll them into rounds, and place them on the cookie sheet. Lightly press down on each cookie.
  • Place pan in the oven to bake for 10-11 minutes, or until just golden at the edges. They will still be very soft when you remove them from the oven - that's a good thing!
  • Cool on the baking sheet for 10 full minutes, then very carefully transfer to a cooling rack to cool completely.
