Recipes!!!!

Cream Cheese Lasagna


  • 1-1/4 lb ground beef
  • 1 (26-oz) jar spaghetti sauce
  • 1 tsp Italian seasoning
  • 1 (8-oz) package cream cheese, softened
  • 1 cup cottage cheese
  • 1/4 cup sour cream
  • 1 Tbsp dried parsley
  •  2 eggs, beaten
  • 1/2 (16-oz) package lasagna noodles
  • 1 (4-oz) package sliced pepperoni
  • 3 cups shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese

Preheat oven to 350ºF. Lightly spray a 9x13-inch pan. Set aside

In a large skillet cook ground beef until no longer pink. Drain fat. Stir in spaghetti sauce and Italian seasoning. Cook on low for 10 minutes.

Cook lasagna noodles according to package directions. Drain and set aside.

Combine cream cheese, cottage cheese, sour cream, parsley and eggs. Stir well.

Spoon a small amount of meat sauce into bottom of prepared pan. Layer with half of cooked lasagna noodles, half of cream cheese mixture, half of pepperoni, half of meat sauce and 1 cup of mozzarella cheese.

Repeat layers. Top with remaining mozzarella and Parmesan cheese.

Cover and bake for 30 minutes. Uncover and bake an additional 10 to 15 minutes, until cheese has slightly browned. Remove from oven and let sit for 15 minutes before serving.

I posted this lasagna recipe hoping I might be able to sneak it past my family sometime in the near future. Ever since we received lasagna everyday for two solid weeks one time when Kevin had very first back surgery many years ago, my family has hated even the sight of lasagna in the box at the stores. If I mention lasagna they all turn up their noses every time.  So, I have to really make it good or they will turn on me for sure. LOL!

Here are a few recipes I was thrilled to find.  I have a smoothie problem lately.  Here are the Jamba Juice Recipes I found and cannot wait to try....(My absolute favorite Jamba Juice Smoothie is the Aloha Pineapple!  Love it!!)  Enjoy!

Chick-fil-a Cobb Salad

Cook Time

Prep time: 12 min
Cook time: 5 min
Ready in: 17 min
Yields: Serves one

Ingredients (in order of use)

  • About one Hand full or enough to fill a 26 oz bowl Romaine Lettuce, -Chopped
  • 1 oz Spring Mix Lettuce
  • 0.5 oz Carrot and Red Cabbage Blend, -Carrot shreds and finely chopped Red Cabbage
  • 0.5 oz Monterey/Jack cheddar cheese blend
  • 2 tsp Roasted Corn, -Refrigerated
  • 1 tblsp Chopped Bacon
  • 2 tsp Hard Boiled Egg, -Chopped
  • 4 Grape Tomatoes, -1 for each corner of the salad
  • Approximately 3 oz Your choice of chicken, -Sliced

Put it all together

  1. Get a square plate or 26 oz square bowl. Chop Romaine lettuce into bite size squares and add to dish. (Be sure to wash ingredients before preparing)
  2. Spread the spring mix evenly across the romaine lettuce
  3. Carrot/redcabbage blend comes next
  4. Next, sprinkle the delicious Monterey/Jack cheddar cheese
  5. Add the tblsp of bacon in the same fashion as the cheese, along with your tsp of egg
  6. Place 1 grape tomato in each corner of the salad
  7. Finally! Place your choice of chicken diagonally across the top of the salad
  8. Enjoy this tasty delicacy with any dressing that you choose. You may also top it with dried red peppers, croutons or sesame seeds
